What is MicroElements?
A diverse blend of vitamins, minerals, polypeptides, and amino acids that have been identi ed as essential precursors required
to build yeast biomass, with 100% organic nitrogen, all compressed into a convenient tablet form. Gusmer Enterprises has been
formulating fermentation nutrients for many years and has developed MicroElements Brewing Nutrients based on the latest
fermentation research and with the highest quality, bioavailable ingredients for maximum assimilation by the yeast.
A Unique & Notable Nutrient
Unlike traditional yeast nutrient products, which contain a high percentage of inexpensive diammonium phosphate (DAP) and
yeast hulls, MicroElements Brewing Nutrients do not contain DAP. Instead, our research team has found that our proprietary
blend of pure vitamins, minerals, and yeast extract gives superior fermentation performance. Breweries enlisted in product
testing noted better yeast occulation, increased yeast viability, higher RDF’s, increased rates of fermentation, and positive
sensory evaluation.
Technical Information
In keeping with good sanitation practices, the easy to use tablet form allows for accurate dosing and virtually no dust, thus
eliminating the risk for airborne contamination in the brewery. All ingredients in MicroElements Brewing Nutrients – Tablets
comply fully with the Adjunct Reference Manual published by the Beer Institute and adhere to the TTB standards. The product is
non-GMO, non-BSE certi ed and formulated in the USA and under GMP conditions.
Application
MicroElements Brewing Nutrients – Tablets are designed for use at the kettle or fermentation vessel in all types of brewing,
especially high gravity brewing, or in yeast propagation regimes. It’s a complete fermentation nutrient supplement. Add during
the last 10-15 minutes of boil for the tablet(s) to fully dissolve prior to knockout.

Enzymes
Enzymes are some of the most important and complex proteins found in nature and are vital to all biological systems. Brewing
could not exist without the enzymatic actions activated from grains during the malting process. Understanding these natural
enzymatic systems allows brewers to apply them to the betterment of the art of brewing.
Novozymes, the world’s largest manufacturer of enzymes to the food industry, developed the rst commercial enzyme for
beverage processing over 35 years ago. Together, Novozymes and Gusmer have since dedicated many years of research
and application development to the continued advancement of enzyme preparations for use in brewing. Today, enzymes are
used by commercial brewers to increase extract and attenuation, control diacetyl, improve ltration, and more. They are a
fundamental tool for consistent production of high quality beer.
Novozymes produces brewing enzymes through natural fermentation processes, which are puri ed and standardized on these
key activities. These enzymes can be applied throughout the brewing process to increase process ef ciencies, brew to brew
consistency, and overall quality. They can also allow for the creation of unique and alternative-style beers.
Enzymes in brewing:
Enzymes are a protein molecule with a characteristic sequence of amino
acids that folds into itself to produce a distinct 3-D structure. The
complexity of the structure creates very specific activities for each enzyme.
Brewer’s grain contains inactive enzymes that through the malting process
become active and available to react with specific substrates in the grain.
Some of the critical enzymatic activities developed during malting that are
essential for brewing are amylases, proteases, lipases, and cellulases.

Cask Ale
Cask Ale Preparation
Preparing beer for cask packaging is a key part of the overall
process for producing quality and consistent beer that will always
delight your customers.
After fermentation is complete and the temperature reduced to
between 6°C and 8°C (43°F - 46°F), and brink yeast has been
recovered, the residual ale yeast will naturally flocculate within the
fermenter and can be drawn off, or else a portion of beer can be
run through a centrifuge and a residual yeast count of around
1x10

cells obtained by bypassing some of the flow.
The green beer is then moved to racking tanks and is stored at
this stage for typically no more than 24 hours. As the green beer
is transferred, auxiliary finings are added. These are typically silicates or alginates and these bind and fine out
residual protein from the beer and protect the beer from producing a haze. The fermentable residue can also be
controlled by the addition of priming sugar, usually sucrose.
Beer is then run to the packaging line where each cask has a small quantity of isinglass finings added.
Upon delivery to the retail outlet the casks are stillaged on their bellies, the keystone tapped and a soft spile is
inserted in the hole in the bung. Secondary fermentation takes place in the cask producing natural carbonation of
the beer and the degree of fermentation can be judged by the level of gas escape through the soft spile.
Once the level of carbon dioxide production slows then the soft spile is replaced with a hard one which ensures that
the entrained carbonation in the beer remains in solution and provides a perfectly conditioned beer.
Once the beer has stopped ‘working’, the isinglass plays its part in the process. This removes the residual yeast as
isinglass has a net positive electrostatic charge while the yeast is predominantly negative and this facilitates the
rapid and complete settling of the yeast into the belly of the cask.
The keystone lies just above the cask belly, and as beautifully conditioned and sparkling clear beer is drawn off, the
sediment remains undisturbed in the cask. Once the cask is below half full, it is gently stooped forward so that all
but the last few pints can be dispensed. It is important to replace the hard peg between sessions to maintain
condition.
